Shish Kabobs look fancy but are actually quick and easy to make and delicious to eat!
Stew beef or round steak cut in 2-inch pieces (figure a 1/2 lb per person you are feeding)
Potatoes cut into 1-2 inch chunks (one potato per person peeled or skin on, your choice)
Peeled onions cut into1-2 inch wedges
Tomatoes (either cut into wedges or use cherry tomatoes)
Thick slices of zucchini or summer squash
Metal or wooden skewers
Italian salad dressing (2 bottles)
Hoagie buns for the number you are feeding
Marinate in a large cake pan all pieces overnight. Pour the Italian dressing over all pieces wetting thoroughly so they will soak overnight. Save some of the dressing to top the sandwiches. Cover and place in the refrigerator until time to cook.
If you are using wooden skewers coat them in oil first so that they don't burn and the pieces will slide on better. Now load the skewers with one piece of each item cut up and repeat until the skewer is loaded leaving an inch or two at each end of the skewer. Fire up the grill and cook until the meat is done. Place the skewer in a bun and slide the skewer out leaving the pieces in the bun. Drizzle with a little more Italian dressing or other toppings of your choice. Add a fruit salad, cookies, and ice cream for a complete meal!
