THE VARIATIONS OF IMPOSSIBLE PIE


This recipe can be turned into a quiche very easily!


I love to use the Impossible Pie recipe in many ways. It is so quick and easy and makes its own crust. Here is the recipe basics and then some variations:

The basics always include Bisquick Baking Mix, eggs and milk. You can use a gluten free biscuit baking mix if desired. The amounts change a little depending on other ingredients, but all basic ingredients are mixed in a blender then poured into a pie pan and baked. It makes its own crust. You can make dessert pies or quiches and meat pies. I'll give you a few to try.

1. Impossible Pumpkin Pie

(Really quick for a busy holiday)

Put into blender:

1/2 cup Bisquick

4 eggs

2 cups milk

1 cup canned pumpkin

1/2 stick butter

1 cup sugar

1 teaspoon cinnamon

1/2 teaspoon ginger

 (or use pumpkin pie spice instead of these spices. Same amount.)


Whip all in blender and pour into large greased pie plate. Bake 50-60 minutes at 350*F. Serve with Cool Whip.

2. Impossible Apple Pie

1 cup raisins

6 cups sliced peeled apples

1 1/4 teaspoon cinnamon

1/4 teaspoon nutmeg

1/2 teaspoon cloves

(or use 2 teaspoons apple pie spice in place of the spices)

1 cup sugar

3/4 cup milk

1/2 cup Bisquick

2 eggs

2 tablespoon softened butter

Blend all ingredients except apple and raisins. Put apples and raisins in greased pie plate and pour blended ingredients over the top. Sprinkle on top with Streusel.

Streusel:

1 cup Bisquick

1/2 cup chopped nuts

1/3 cup packed brown sugar

3 tablespoons butter

Mix together until crumbly. Bake 55-60 minutes at 350*F until firm in the center.


3. Impossible Taco Pie

3/4 cup Bisquick

3 eggs

1 1/4 cup milk

1 pound ground beef

1 envelope taco seasoning

1 can chopped green chilies drained

1/2 cup chopped onion

2 tomatoes diced

1 cup shredded cheese (Cheddar or Mexican)

Sauté onion and brown beef in pan, add taco seasoning and pour into greased pie plate. Blend the rest of the ingredients and pour over the top. Top with tomatoes and cheese. Bake 50-60 minutes at 350*F until center is firm.

4. The above number 3 recipe can be turned into a ham and spinach quiche by replacing the ground beef, taco seasoning and chilies with chopped ham, 1 cup of fresh spinach and 1/2 cup mushrooms if desired. Change the cheese to swiss and don't forget to sauté the onion. Bake as above.
